Capucine Tuber (mashua)

Capucine tubers are oblong white tubers with stripes and insert purple eyes. They are originally from the Andes.

Description

In Ecuador and Peru they are used to replace potatoes.
Their flavor is fresh and spicy.

They contain mustard oils and so have a peppery flavour.

They can be eaten raw or cooked (like potatoes).
