Description

Petit Violet artichokes are harvested before maturity, which means the choke has not formed and they can be eaten raw or cooked.
It has a beautiful purple colour with green highlights.

Preparation: Cut off the stem and upper the third of the head.
Remove the outer leaves, keeping only the heart.
Blanch in boiled salted water for 2 minutes.

They can be eaten in a marinade with olive oil, pink garlic and herbs.
